Types and characteristics of baking flavors
Baking essence can be divided into the following categories according to its properties:
Water-soluble essence : distilled water, ethanol, propylene glycol, glycerin and other water-soluble agents as diluent, mainly used in beverages, ice cream, wine and other water-based food. Its aroma is relatively elegant, low concentration and volatile .
Oil-soluble essence : refined vegetable oil, propylene glycol, glycerin and other thinners, rich fragrance, high temperature resistance, not volatile, mainly used in baking products and confectionery and other foods requiring high temperature operation .
Emulsified essence : general O/W, emulsifying effect can inhibit the volatilization of the essence, suitable for cold drinks, fruit juices and other foods that need turbidity .
Powder flavors : including microcapsule flavor and adsorbed powder flavor. Microencapsulated essence is used to encapsulate spices by microencapsulated technology, which has good stability and is suitable for high-temperature baked goods. Baking flavors are usually composed of a mixture of various chemical components, such as esters, aldehydes and ketones, which are precisely matched to produce a variety of unique aromas and tastes .
